Easy, veggie loaded “right rice” skillet

Weeknight dinner in a flash, with leftovers!

DELICIOUS meal that comes together in a flash. Full disclosure a lot of these ingredients have some assistance in being prepared already but gotta leverage the great options out there!

This recipe is an Italian/ Mediterranean on my favorite comfort food of rice and beans. I used the “right rice” brand of veggie “rice”, Italian chicken sausage, great northern (white) beans, and a whole lot of veggies.

Ingredients:

-1 pack of mild Italian chicken sausage (or your preference)

-1 pack of right rice - Mediterranean flavor

-1 pack of Whole Foods’ “Provençal” frozen veggie blend (blend of zucchini, eggplant, bell peppers, and basil dressing)

-handful of frozen cauliflower rice

-handful of frozen spinach

-can of great northern beans

-cheese - shredded pizza mix (mozzarella and Parmesan)

-lemon zest

-fresh basil

To prepare:

-cook right rice in small sauce pan according to directions (12 mins)

-sauté frozen Provençal blend (or whatever veggie mix you use)

-add in frozen cauliflower rice and frozen spinach

-cut sausage into small circles and add to pan

-add great northern beans

-stir to mix up. The basil sauce from the veggies will be a big part of the flavoring but feel free to add extra oregano or Italian-esque spices

-once right rice is done cooking, add to pan and mix everything together

-top with lemon zest

-add a layer of shredded cheese to top, cover and remove from heat. Let cheese melt 1-2 minutes.

-serve and top with fresh basil
