Edamame Pasta + Ginger Sesame Green Beans
This was inspired by a dish my mom used to make growing up, ginger sesame "greenie beanies". Perhaps that's where my obsession with ginger came from! Super easy to make + good for you.
I also saw this fancy Edamame pasta in the grocery store a few weeks ago and thought, no way, too good to be true. I broke down the other day and bought it to test it out, and man am I glad I did!! AMAZING! How do they do it??!!!! It's 100% organic edamame and 25g protein per serving.
As I was thinking what to put on the pasta, this Asian-esque combo came together PERFECTLY. Also I bought a lot of sesame seeds the other day, finally, and just feel so fancy now putting them on everything I make.
Ingredients:
- 1 package Explore the World Edamame Pasta
- 1/2 onion chopped
- 1 bunch green beans
- 1 cooked sweet potato
- Couple tablespoons sesame seeds
- 1 piece peeled + chopped ginger
- Sauce - soy sauce, lemon juice, sesame oil, pinch of nutritional yeast, ume plum vinegar
- Topping - more sesame seeds, green onion
To prepare:
- Prepare pasta as directed - I left it al dente and rinsed with cold water. Not mushy one bit!
- Sautee the onion, add garlic, then add sesame seeds and stir all together, lightly toasting the sesame seeds.
- Add chopped green beans, dash of soy sauce
- Add cooked sweet potato, mix all together and heat through
- In your bowl, put edamame pasta, green been + sweet potatoes on top.
- For the sauce, I just put to taste - soy sauce, lemon juice, sesame oil, pinch of nutritional yeast, ume plum vinegar, etc. I love my food super sour so you can adjust to your liking.
- Top with more sesame seeds + green onions
- Enjoy!
